Magnesium in Food: Why Most Labels Never Mention It

Turn over a loaf of wholemeal bread and you will find seven figures on the back panel. Energy, fat, saturates, carbohydrate, sugars, protein, salt. Magnesium is not there. It will not be there on the bag of brown rice either, or the tin of chickpeas, or the block of dark chocolate.

This is not an oversight, and it does not mean the magnesium is absent. It means the rules that govern what a food label may say are quite separate from the rules that govern what a food actually contains. Once you understand where the line sits, a lot of confusing shopping makes more sense.

The gap matters because magnesium is one of the nutrients people research at the shelf. They arrive with a figure in mind, look for it on the food they already eat, find nothing, and reasonably conclude that the food has nothing to offer. The label is simply not designed to answer that question.

Why magnesium turns up where it does

Lists of magnesium-rich foods tend to repeat themselves: green leafy vegetables, nuts, seeds, wholegrains, pulses. The repetition looks like laziness. It is actually chemistry.

Magnesium sits at the centre of the chlorophyll molecule. The green pigment that lets a plant photosynthesise is built around a magnesium atom, which is why green plant tissue carries the mineral structurally rather than incidentally. Spinach, chard, kale and broccoli appear on every list for the same underlying reason.

Seeds and nuts are concentrated for a different reason. They are storage tissue, packed with the minerals a seedling would need, and they are eaten dry. Remove the water and the figures per 100g rise sharply.

Wholegrains are the most interesting case, because the magnesium is not evenly distributed through the grain. It sits largely in the bran and the germ, the outer layers stripped out during refining. That single processing step accounts for most of the difference between wholemeal and white flour, or brown and white rice. Nothing has been taken out of the diet; it has been taken out of the grain.

Water contributes too, though variably. Mineral waters differ substantially in magnesium content by source, and tap water differs by region depending on the geology it has passed through. Neither is usually counted by anyone tracking their intake, and neither is easy to quantify without checking the specific bottle or the local water report.

The rule that keeps magnesium off the label

Under assimilated Regulation (EU) No 1169/2011, the mandatory nutrition declaration on prepacked food covers energy plus fat, saturates, carbohydrate, sugars, protein and salt. That list is closed. Vitamins and minerals are not on it.

A manufacturer may add magnesium voluntarily, but only if the food contains what the regulation calls a significant amount. For solid foods that means at least 15% of the reference intake per 100g. For beverages the threshold is 7.5% per 100ml, and for single-portion packs it is measured per portion instead.

The reference intake used for magnesium labelling in Great Britain is 375mg. Fifteen per cent of that is roughly 56mg. So a solid food has to carry about 56mg of magnesium per 100g before its label is permitted to mention magnesium at all.

Below that line, the label says nothing. Not because the food contains nothing, but because the regulation treats smaller amounts as too modest to declare meaningfully on a per-100g basis.

The same threshold governs nutrition claims. A food may only be described as a source of magnesium if it meets that 15% figure, and only as high in magnesium at double it, around 113mg per 100g. Health claims sit on top of this again. The authorised wording on the Great Britain Nutrition and Health Claims Register — magnesium contributes to the maintenance of normal bones — may only be used on a food that already qualifies as at least a source of magnesium.

Follow that through and you get the odd result that gives this article its point. A bag of pumpkin seeds clears every threshold comfortably. A slice of wholemeal bread does not come close on a per-100g basis. Yet for someone eating bread daily and pumpkin seeds three times a year, the bread is doing more of the quiet work across a week. The regulation is measuring the food. It has no way of measuring the diet.

Reading food composition figures without being misled

If the label will not tell you, the next place people look is a food table. In the UK the reference dataset is the Composition of Foods Integrated Dataset, published on GOV.UK and derived from the long-running McCance and Widdowson series. It is the source most nutrition professionals here work from.

Comparing figures across sources is where people come unstuck, and there are four common traps.

The first is raw versus cooked. Many published values are for the raw food. Boiling leaches water-soluble minerals into the cooking water, which is then poured away, so a boiled value and a raw value for the same vegetable are not interchangeable.

The second is per 100g versus per portion. Pumpkin seeds are quoted per 100g in almost every table. Nobody eats 100g of pumpkin seeds. A 30g handful is closer to reality, and it changes the figure by a factor of three.

The third is national reference points. American articles quote American recommendations, which are set differently from ours. The NHS figures for adults aged 19 to 64 are 300mg a day for men and 270mg a day for women. The 375mg used on labels is a separate labelling reference, not a personal target. Comparing a US percentage against a UK figure produces numbers that cannot be reconciled.

The fourth is time. Claims that food is less mineral-rich than it once was circulate widely, usually by comparing an old edition of a food table with a new one. Those comparisons are harder to make than they look. Analytical methods, sampling, varieties and even which cut or preparation was tested have all changed across editions, so a difference between two editions is not automatically a difference in the food.

Where a supplement label sits in all this

Supplements are labelled to a different standard, which is why their panels look so much more informative than a bread wrapper. A food supplement must declare the amount of each nutrient per recommended daily portion, alongside the percentage of the reference intake it represents.

That is why a supplement can quote a precise figure while a bag of oats stays silent. The two products are not being held to the same disclosure rules. A supplement panel is not evidence of a better food; it is evidence of a different regulatory category.

Does the water I drink count towards magnesium intake? It can, though the amount varies a great deal. Bottled mineral waters publish a mineral analysis on the label, so the figure is checkable. Tap water depends on regional geology and is reported by the local water supplier rather than printed on anything you buy.

Why does my wholemeal bread not list magnesium if bread is a source of it? Because the label may only declare a mineral present in a significant amount, and the threshold is measured per 100g. Most breads fall below it. That is a statement about the threshold, not about the bread.

Is brown rice meaningfully different from white? On magnesium specifically, yes, and the reason is structural rather than nutritional marketing. The mineral concentrates in the bran and germ, and milling removes both. The same logic applies across wholemeal versus white flour and wholegrain versus refined cereals.

Should I be adding my food intake and my supplement intake together? People often want to, and the two figures are not straightforwardly additive because food intake is an estimate and supplement intake is a declared amount.
